Think of it like this: A single customer can spend a limited amount on food per visit. At some point their stomach will protest.
But given the right offer, the spending ceiling per visit is much higher. A bottle of wine might generate $50 in revenue or it might generate $250. The difference depends on which wines are available, how they are presented and how they are served.
Weaponising your list starts with the format and moves through the content, the variety, the pricing and into storage, presentation, training and serving. A great (by which we mean a relevant and profitable) list takes time, effort and expertise.
